Organic persimmons marmalade

Ingredients:
.
1kg of fairly ripe persimmons,
1kg of sugar,
1 vanilla pod .
.
Preparation:
Clean the persimmons and dry them gently. Remove the stalks, cut them into quarters and remove the seeds. Weigh the fruit and add the same amount of sugar to a jam pan or stewpot. Leave to macerate overnight or for at least 6 hours. Add the vanilla bean, split and scraped out. Cook the mixture and bring slowly to the boil. Lower the heat and cook slowly for an hour. The marmalade should become thick, compact and stringy. Remove the vanilla. Immediately put the jam into jars that have been washed, scalded and dried with a clean cloth.

Organic persimmon cake

The simple persimmon cake:

On a yoghurt cake base ultra simple to make and light.

Ingredients:
1 pot of yoghurt,
2 pots of sugar,
3 pots of flour,
3 eggs,
1/2 sachet of yeast without phosphates,
1 packet of vanilla sugar,
1 jar of oil 1 pinch of salt
A few spoonfuls of persimmon marmalade
1 persimmon

Preparation:
Pour the contents of the yoghurt pot into a bowl.
Use the empty pot as a measuring stick. Add the two pots of sugar, the vanilla sugar and the pinch of salt.
Mix well.
Add the eggs and mix to a smooth dough.
Add the flour and yeast and continue mixing. Finally add the jar of oil.
Be careful, it's a bit tricky to add the oil to the previous mixture. Line a cake tin and bake for 30-35 minutes at 180 degrees.
When the cake is done, let it cool down a bit and remove it from the tin.
When completely cooled, cut the cake in half crosswise and spread persimmon marmalade on the underside.
Place the top of the cake on top of the marmalade and decorate with fresh persimmon slices just before serving.

Winter fruits salad
.
Ingredients:
For 4 people:
2 fairly firm persimmons,
2 bananas,
2 yellow kiwis, preferably 1 lime 1 sprig of fresh mint
Almonds and sultanas
.
Preparation:
.
Peel all the fresh fruit and cut into slices.
Arrange them nicely on a plate or in a bowl.
Add the dried fruit. Squeeze the lime and remove the zest.
Drizzle with lemon juice, sprinkle with lime peel and mint leaves. A very fresh dish full of vitamins! To be repeated every day for a healthy breakfast!
